Chef Tony’s Pizza has perfect recipe for success

Combining high quality ingredients with courteous, efficient service is the genius behind the success of Chef Tony’s Wood Fired Gourmet Pizza, which recently opened at 2911 Cross Timbers Road in Flower Mound.

The special oven – straight from Italy and about the only thing not made in the U.S. at the restaurant – ensures fast, convenient service for customers, says Chef Tony and business partner Chris Bui, who joined forces to open the second location near Kroger at FM 1171 and FM 2499.

The first location in Allen started after Chef Tony earned his culinary degree from the Art Institute of Dallas. He worked at Nobu and then as sous chef at N9ne Steak House, Nove Italiano and AMPM Restaurant.

Following more than 13 years of perfecting his culinary skills, Chef Tony decided it was time to launch his own restaurant – both to continue challenging himself but also to have greater flexibility in spending more quality time with his family.

The original idea for a pizzeria followed several disappointing attempts to find pizza that he liked in his local neighborhood. Unable to find one that met his discerning tastes and expectations, he decided opening an artisan pizza restaurant was exactly what he should do.

“We make almost everything in-house,” Chef Tony said. From making their own meatballs to using the freshest vegetables they can find for pizzas and salads, providing healthy fare is important. Sauces are made from crushed tomatoes, fresh herbs and sliced roasted garlic. Dough is made in-house using a four-step fermentation process.

To Chef Tony and Chris, it is the little things that make a difference.  Focusing on providing quality, healthy choices for families is a central part of their menu – all while keeping in mind the busy lives of their customers by delivering service from the first order to the first bite in 10 minutes or less.

“We wanted to create something different,” Chef Tony says. “We’re not your typical pizzeria.”
