as we explore new vegetables & fruits in our house we have come upon Jimica, anyone eat it? seems like it would be good made with something, a quick search revealed many make as hash browns, Ill try that. Anyone have any other ways/recipes?

If you can make hash borwns from jicima..it would be a new one on me and I've been eating the stuff since the 70's.

Normally it is just peeled, given a large julienne cut and seasoned with lime juice and salt or chile powder..

We like jicama raw in salads and often make a modified version of Grady Spears' jicama and carrot slaw recipe.

I'm only aware of it being eaten raw - cooking as hash browns doesn't sound like the best way to use the veg - but who knows, I could be wrong.
It doesn't matter if I've had my coffee or not.

Do you mean "jicama?" I've never heard of jimica.

Like Mrs T said, slaw. A citrus based Jicima slaw on fish tacos..... it's hard to beat. It's because of the jicima slaw that I tried fish tacos for the first time, after never being able to understand, why fish tacos. I've never actually cooked with it though.

I just finished making Jimica slaw, I'm leaving it in the frig to marry till dinner.
i found a nice low sodium healthy recipe, i'll let you know how it goes over.

I used jicima as a raw veggie, just peeled and cut into chunks when I make veggie platters for parties and things. Since it has a slightly sweet flavor people tend to like it and I get compliments.
